Esoteric's BBQ is a roaming food truck in Vancouver, Washington. They are usually spotted in downtown Vancouver.
The menu has three meats: tri-tip, kalua pork, and BBQ chicken. There's also a vegetarian option. I got a couple shots of their smoker as well.
You can get tacos, bowls, or plates here. I saw the "Island Bowl" ($8) and had to get it. It starts with pineapple, cilantro, and lime rice; along with a choice of meat. Naturally, I got the kalua pork. The kalua pork here is smoked for three hours, wrapped in banana leaves, then smoked for another three hours.
You can get one side for $2.25 more, and I opted for the "Kickin' Broccoli Slaw": shredded broccoli stems and green apple mixed with a cilantro, lime, and jalapeno dressing.
Awesome pork, juicy and tender. It may have reminded me more of Hawaii had there been a bit more salt added. The rice was good. It's worth noting that the pineapple likely made the rice a bit more moist than normal. The slaw was easily the favorite, amazing flavor.
