Pi Squared

Pi Squared is located at the Carts on Foster pod (SE 52nd and Foster) in Portland, Oregon.

Adam Eubanks started Pi Squared in August 2014 and clearly has a passion for pizza. He graduated from culinary school in Missouri and has always wanted to open his own food business.

Pi Squared offers 10-inch square pizzas, tarte flambee, and fresh salads. His menu items are named for Greek and other European icons. The panda went straight for the pie; all pizzas are $9.

The "Einstein" starts with basil-pesto-alfredo sauce and Monterrey jack cheese, topped with artichoke hearts, roasted garlic, and a medley of mushrooms (including oyster, crimini, and portobello).

Excellent pizza with a wonderful light char on the underside. All the toppings are nearly pushed to the edges, leaving just slight room to show some browned crust. You're treated to a well-balanced bite of creamy pesto, cheese, and mushroom. A few whole cloves of roasted garlic are spaced out on top. The slight crunch from the crust rounds out a solid pizza experience.

It basically took me a couple minutes for the hungry panda to destroy said pizza. Oh, how this would go so wonderfully with a beer -- that you can get at the adjacent Carts on Foster Pod Bar.

Loving the woodfired pizza scene in PDX. This is yet another great addition. 8.25/10
