Stash the Gumbo

Stash the Gumbo is located at the A-15 pod (near NE 15th and Alberta) in Portland, Oregon.

Owner Christine grew up in Beaumont, Texas, which is next to the Texas-Louisiana border and roughly a 4-hour drive to New Orleans.

The cajun-creole menu is a familiar one and includes Gumbo, Etoufee, Po'Boys, and Biscuits. This cart uses local product from in and around Portland.






Even when it feels like 2000 degrees outside, the panda samples the gumbo. Panda approved.




I've heard a lot about "debris," which basically is succulent, juicy roast beef in a sandwich. To me, it's Louisiana's version of the French Dip. Add some horseradish mayo. Sold.





Christine gets crawfish flown in from Louisiana. She makes her own roux and boudin.

As far as biscuits go, you can't go wrong with standard biscuits and gravy. There are also a couple of sweet options here.

Stash the Gumbo opened in February 2014 at the Central Eastside pod and has been at the A-15 pod since late May.

This is a great food cart with some wonderful food. Hope people will check this spot out! 8/10
