Bistro Box

(UPDATE 6/5/13: Bistro Box has announced on their Facebook page that they will be moving to Spokane. Their last event on the west side will be the Uwajimaya Food Truck Round Up on June 8, 2013.)

Bistro Box is a Washington food truck located in Renton, WA. Like virtually all Washington mobile food units, they will be at more than one location in a week. They are at Triton Towers 1 on Mondays; Park Ave. on Tuesdays and Wednesdays; Triton Towers 3 on Thursdays; and at Sips Espresso on Sunset Blvd. on Fridays and Saturdays. Barbara Pagarigan is the person heading this food truck.

Continuing my drive through Renton (on my way to Seattle), I found Bistro Box at their Park Avenue location. It was still too early for lunch, but was told I could get a breakfast sandwich instead.

I went with a sandwich of bacon, egg, cheese, and roasted tomatoes on locally baked bread ($4.40). Bacon makes everything better, right?

And yes, there's bacon in there because bacon makes everything better
A delicious sandwich here where you really can't go wrong. The bread was perfectly cooked on the flattop, and eggs and bacon have to be among the top comforting breakfast foods out there. The cheese and tomato added more flavor to this one. I felt like I was eating a damn good omelet in between two pieces of toast.

I then spotted Bistro Box at the Seattle Center Mobile Feast. I just *had* to try the Coconut Chicken Slider ($4 for one), since it's one of their most popular items. It's a chicken breast marinated in green tea, ginger, and lime juice, then battered in a tropical rum batter, breaded with coconut and panko bread crumbs. After frying, it's topped with their house Bistro slaw and sweet chili orange sauce on a Hawaiian brioche bun.

Coconut Chicken Slider (Bistro Box)
Basically, it was one of those foodgasm moments. The sweetness from the coconut and the chili orange sauce, when combined with that chicken, provided the quintessential balance of savory and sweet. The panko crust was perfect. If anything, it's a very small portion (it is a slider, after all), so I wondered if I was getting the best bang for my buck. Two seconds later, I said...hell yes, I'm getting a great deal here.

Sample of their pot roast (for their Pot Roast sandwich)
I also sampled their pot roast while at the Mobile Feast (to be used for their pot roast sandwich). The juicy meat was nice, slow-cooked very well. I loved the sweetness of the carrot to counter the savory beef.

Bistro Box also offers various sliders with Kobe beef patties, as well as an array of paninis (a full one for $7.95 or a half for $4.50).

Now that I've tried both their breakfast and lunch items, I can say this is one of my favorite Seattle food trucks. Find Bistro Box in Renton ASAP and get some sandwiches or sliders! You won't be disappointed! 9/10
